1 sprig spearmint
1 onion, julienned
1 bunch fresh cilantro
2 cloves garlic
2 carrots, sliced
2 ancho chiles, or the chili of your preference
1/3 onions, whole

In a deep pot, cook the chicken, tomatoes, and chiles.
Once cooked, blend them together with the garlic, 1/3 of the onion, and a bit of the chicken broth.
Then add the julienned onion, carrot, cilantro, bay leaves, and mint to the pot.
Incorporate the tomato and chili mixture. Adjust seasoning with salt and pepper to taste.
