Chicken in Tomato Sauce

This recipe was passed down to me by my mom; I loved it from the moment I tasted its delicious flavor. She always made it for me and my family, and now I recommend it to you. Give it a try!

  • 5 chicken thighs
  • 3 leaves bay
  • salt, and pepper to taste
  • 4 tomatoes
  • 1 sprig spearmint
  • 1 onion, julienned
  • 1 bunch fresh cilantro
  • 2 cloves garlic
  • 2 carrots, sliced
  • 2 ancho chiles, or the chili of your preference
  • 1/3 onions, whole

  • In a deep pot, cook the chicken, tomatoes, and chiles.
  • Once cooked, blend them together with the garlic, 1/3 of the onion, and a bit of the chicken broth.
  • Then add the julienned onion, carrot, cilantro, bay leaves, and mint to the pot.
  • Incorporate the tomato and chili mixture. Adjust seasoning with salt and pepper to taste.
