Chicken Jardinière

This Chicken Jardinière recipe is a very easy dish to cook. Its name comes from the cut of vegetables into wide sticks, called jardinera or jardiniere in French. This delicious chicken recipe is very quick and practical to make, you can use the traditional vegetables like carrot and peas, or the ones you have stored in the refrigerator to take advantage of leftovers. Chicken Jardinière with potato is a recipe that works as a complete meal since it includes all the food groups we need for a healthy diet: chicken as protein, vegetables as fiber, potato as carbohydrate, and olive oil as fat.

  • 1 tablespoon salt
  • 1 cup potato, cut into jardinera
  • 1 cup carrot, cut into jardinera
  • 1 cup peas, cooked
  • 2 tablespoons olive oil
  • 2 chicken breasts, with skin
  • 2 chicken thighs, with skin
  • 2 chicken drumsticks, with skin
  • 1 cup onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 1 cup tomato, tomato cut into jardinera
  • 1 cup chicken broth
  • 2 leaves bay
  • 1 tablespoon thyme
  • 1 pepper
  • parsley

  • Heat a pot with water until it reaches boiling point, add salt and cook the potato and carrot for 3 minutes to blanch them, remove from cooking and immerse in ice water to stop the cooking. Strain and set aside.
  • For the chicken jardinière, heat a skillet over medium heat with the oil, fry the chicken skin side down until golden, add the onion and garlic, cook until transparent, add the tomato and cook until it breaks down.
  • Fill with chicken broth and season with bay leaf, thyme, salt, and pepper. Cook for about 10 minutes. Once the chicken is cooked, add the vegetables and cook for 2 more minutes. Serve with parsley.
