Chicken Patties in Chipotle Sauce

  • 1/4 cups parsley, finely chopped for the patties

  • 3 tablespoons vegetable oil
  • 1/4 onions, roasted for the sauce
  • 1 clove garlic, roasted for the sauce
  • 5 tomatoes, roasted for the sauce
  • 3 tablespoons chipotle chile, for the sauce
  • 3 tablespoons piloncillo, granulated for the sauce
  • 3/4 cups chicken broth, for the sauce

  • For the patties, mix the ground chicken with garlic powder, onion, parsley, oregano, and the egg until everything is incorporated; season with salt and pepper. Form the patties using your hands, refrigerate.
  • For the sauce, blend the onion, garlic, tomato, chipotle, piloncillo, and chicken broth until you get a smooth mixture.
  • In a saucepan with hot oil, pour the chipotle sauce, add each chicken patty one by one, season with salt and pepper.
  • Serve on a wide plate, garnish with parsley and Cotija cheese, and accompany with white rice.
