Chicken with Garlic Mushrooms

  • 2 cups Canola Vita® canola oil
  • 4 tablespoons garlic, cut into thin slices
  • 1 cup guajillo chile, sliced
  • 2 cups button mushrooms, filleted
  • 4 chicken cutlets, flattened
  • 200 grams panela cheese, cut into sticks, for stuffing
  • 1 pinch salt and pepper
  • 1/4 cups parsley, finely chopped, for garnish

  • Preheat the oven to 180° C.
  • For the garlic sauce, in a bowl mix Canola Vita® oil with garlic, guajillo chili, mushrooms, and marinate for 30 minutes. Set aside.
  • On a cutting board, place the chicken breasts, season with salt and pepper, fill with panela cheese, and roll to form a roll. Cover with aluminum foil and bake for 15 minutes or until the chicken is cooked. Remove from the oven, slice, and keep warm.
  • Heat a skillet over medium heat, add the mushrooms with the marinade, and cook for about 10 minutes over medium heat or until the garlic is golden and the mushrooms are soft. Season with salt and pepper and add the chopped parsley. Remove.
  • Serve the chicken breast with the garlic mushrooms, accompany with a salad, and enjoy.
