Chicken with Green Onions

  • 4 chickens
  • 1/2 onions
  • 20 green onions
  • 5 serrano chiles
  • 250 grams bacon
  • 1 pinch salt
  • 1 pinch pepper
  • 1 teaspoon vegetable oil
  • 1 cup chicken broth

  • Place the chicken in a pot to boil with half an onion and salt to taste; once cooked, separate from the broth and let it drain.
  • Cut the green onions into quarters, as well as the serrano peppers. Chop the bacon into medium squares.
  • In a saucepan, add the oil to fry the bacon until golden. Remove it from the saucepan and fry the chicken in the bacon fat; once golden, add the onions, peppers, and a cup of chicken broth; let the broth reduce.
  • Add the bacon, season with salt and pepper to taste, and let the onions and peppers cook well for about 15 to 20 minutes.
