Cilantro Chicken Tostadas

  • 3 tomatillos
  • 1 clove garlic
  • 1/4 onions
  • 2 serrano chiles
  • 1/2 cups fresh cilantro
  • 1/2 cups sour cream
  • 1/3 cups chicken broth
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 800 grams chicken, shredded
  • 8 tostadas, corn
  • 300 grams refried beans
  • 1 cup lettuce, chopped
  • 1/2 cups queso fresco, crumbled
  • 1 avocado
  • fresh cilantro, chopped, for garnish

  • Blend the green tomato with the garlic, onion, chili, cilantro, sour cream, chicken broth, and salt. Strain the sauce.
  • In a small pot over medium heat, melt the butter and add the sauce. Once it comes to a boil, reduce the heat and cook until thickened. Add the chicken and cook for 10 more minutes. Season and remove from heat.
  • Spread a little beans on each tostada, add lettuce, the chicken, sprinkle the cheese, and decorate with avocado and cilantro. Serve.
