Cajun Fried Chicken

Cajun fried chicken is a traditional preparation from the southern United States, specifically from Louisiana; this type of fried chicken is characterized by being very spicy and hot. For this version, we added an extra kick with Red Hot® Sauce.

  • 1 tablespoon paprika, for the Cajun mix
  • 2 1/2 tablespoons salt, for the Cajun mix
  • 1 teaspoon onion, for the Cajun mix
  • 1 teaspoon garlic, for the Cajun mix
  • 1 teaspoon cayenne pepper, for the Cajun mix
  • 3/4 teaspoons white pepper, for the Cajun mix
  • 3/4 teaspoons black pepper, for the Cajun mix
  • 1/2 teaspoons thyme, powder for the Cajun mix
  • 1/2 teaspoons dried oregano, for the Cajun mix
  • 3/4 cups Italian dressing, for marinating the chicken
  • 8 chickens, leg and thigh
  • 1 cup Frank’S® Red Hot Wings sauce, for the dressing
  • 3/4 cups butter, melted for the dressing
  • 2 tablespoons lemon juice, for the dressing
  • Frank’S® Red Hot Wings sauce, for breading

  • For the dressing, mix the Red Hot® Sauce, butter, and yellow lemon juice.
  • For the Cajun mix, mix paprika, salt, onion, garlic, cayenne pepper, white pepper, black pepper, thyme, and oregano.
  • Marinate the chicken with the Cajun mix and Italian dressing for 30 minutes. Set aside.
  • To fry, in a bowl mix the flour with enough salt, pepper, and Cajun mix; set aside. Dip the chicken pieces in the Red Hot® Sauce, drain the excess, and coat completely with the flour. In a skillet with enough hot oil, fry the chicken pieces for about 10 minutes over medium heat. Set aside.
  • Serve the chicken accompanied by the dressing and corn. Garnish with green onion.
