Cau Cau de Pollo

It is a very popular recipe of Peruvian origin, delicious and easy to prepare. The original recipe is with tripe, but it can be made with chicken as in this case, hen, and even with meat.

  • 1 onion
  • 2 tablespoons yellow ají, ground
  • 1/2 kilos chicken
  • cumin
  • 2 cloves garlic
  • 1/2 kilos yellow potato
  • parsley, finely chopped
  • pepper
  • 1 carrot

  • Fry the chopped onion in small cubes, add the garlic cloves and the chopped yellow chili. Season with pepper and cumin and add the chicken in small pieces. Stir.
  • Add the yellow potatoes and the diced carrots to the broth.
  • Add the chicken pieces and let it cook. Once cooked, shred and set aside.
  • At the end, integrate chopped parsley and oregano. Adjust the seasoning. Let it reduce until it reaches a soupy stew texture.
