Chicken Medallions in Spinach Sauce

  • 4 chicken breasts, in medallions
  • 100 grams button mushrooms
  • 1 bunch spinach
  • 2 tomatillos, small
  • 1/4 white onions
  • 1 pumpkin
  • 1 Jalapeño chile
  • chicken bullion
  • garlic
  • salt, to taste
  • 1 teaspoon vegetable oil
  • Monterey Jack cheese, grated

  • Season the medallions, place them in the pan to start browning with a little oil. Cover to finish cooking, once ready, remove from the oil.
  • For the sauce, chop the tomato, onion, and chili into small pieces.
  • Fry in a pan with a little oil, season with chicken broth, let cook for 5 minutes, add the spinach and let cook for another 7 minutes. Finally, blend.
  • In another pan, fry the mushrooms and zucchini cut into slices about 5 cm thick with a little oil. Cook for 4 minutes, do not let the zucchini become watery.
  • On a plate, pour a portion of the sauce and place a medallion on top, then add a layer of zucchini and grated cheese, to finish, place another medallion on top and add the mushrooms.
