Parmesan Chicken Rolls are delicious chicken breasts stuffed with vegetables and cream cheese accompanied by a tasty tomato purée sauce. It is a very easy recipe to prepare and has a spectacular flavor.
1 1/2 cups Parmesan cheese, grated (1/2 for the filling)

Preheat the oven to 180° C.
Heat three tablespoons of oil in a medium skillet over medium heat. Add the garlic, onion, and sauté for two minutes. Add the spinach and cook for 5 more minutes, remove from heat and drain the spinach. Cool.
Mix the spinach with the cream cheese and half a cup of Parmesan cheese in a bowl and season with salt and pepper. Fill the chicken breasts with this mixture, roll them up and bake in a deep tray with a silicone mat for 10 minutes.
Heat the oil in a medium skillet over medium heat, add the garlic and sauté for a few seconds. Incorporate the Fresh Chile Tomato Purée Del Fuerte® and cook for 5 minutes, stirring constantly.
Remove the tray and add the Fresh Chile Tomato Purée Del Fuerte® mixture over the chicken breasts, cover them with the remaining Parmesan cheese and return to the oven for 5 more minutes or until the cheese is gratinated.
