Delicious, light, and healthy, this green chicken mixiote is so easy and quick to prepare that it's tempting any day of the week. This is a family recipe that I love.
Cut the zucchini, nopales, tomatoes, and onion into small cubes.
Finely chop the cilantro, parsley, epazote, and serrano chili.
Mix everything in a bowl and season with salt.
Place the vegetable mixture and the piece of chicken on a sheet of mixiote paper or a square of aluminum foil.
Close the sheet or aluminum foil with a string, making sure there are no open spots.
Fill the pressure cooker to 1/4 of its capacity with water, place a steaming rack or some dish to prevent the mixiotes from coming into contact with the water.
Place the mixiotes in the pressure cooker and cook for 45 minutes.
