Green Chicken Mixiote

Delicious, light, and healthy, this green chicken mixiote is so easy and quick to prepare that it's tempting any day of the week. This is a family recipe that I love.

  • 2 zucchinis
  • 2 nopales
  • 1/2 onions
  • fresh cilantro, to taste
  • serrano chiles, to taste
  • 1 chicken breast, cut into 4
  • 3 tomatillos
  • fresh epazote, to taste
  • salt, and pepper to taste

  • Cut the zucchini, nopales, tomatoes, and onion into small cubes.
  • Finely chop the cilantro, parsley, epazote, and serrano chili.
  • Mix everything in a bowl and season with salt.
  • Place the vegetable mixture and the piece of chicken on a sheet of mixiote paper or a square of aluminum foil.
  • Close the sheet or aluminum foil with a string, making sure there are no open spots.
  • Fill the pressure cooker to 1/4 of its capacity with water, place a steaming rack or some dish to prevent the mixiotes from coming into contact with the water.
  • Place the mixiotes in the pressure cooker and cook for 45 minutes.
