1 chicken, clean, without entrails, with skin and butterflied

For the marinade: blend the onion, garlic, tomato, chiles, vinegar, orange juice, oregano, sea salt, and black pepper. Set aside.
Place the chicken in a bowl, then add salt and pepper and brush with butter, using your hands or a brush. Afterwards, pour the marinade all over the chicken, covering it perfectly. Let it rest for 2 to 24 hours in the refrigerator.
Place the charcoal in a burner over direct heat until it is lit and smoking, transfer it to a heat-resistant container and place it at the bottom of the oven, while you should place the oven rack at the top. Bake the marinated chicken at 200 °C for 30 minutes, or until golden on the outside and cooked on the inside.
For the sauce: fry the onion in a pan until golden, then add the serrano chiles and continue cooking for 5 minutes or until the chiles are fried, remove and drain on paper towels. Place the roasted chiles in a bowl and pour the seasoning juice, Worcestershire sauce, and lemon juice, then mix until everything is combined.
Serve the marinated charcoal chicken on a rack and accompany with roasted chiles and potatoes.
