1 chipotle chile in adobo sauce, seedless and chopped

In a medium saucepan, heat 2 tablespoons of olive oil. Add the shallots, garlic, and cook over medium heat, stirring, until softened, 3 to 5 minutes. Whisk in the Hunt's® Chipotle BBQ Sauce, wine, sugar, chipotle, and mustard. Bring to a boil over moderately high heat, then simmer over moderately low heat, stirring frequently, until thickened, about 15 minutes. Let cool slightly, then blend until smooth. Season with salt and pepper.
Preheat the oven to 200 °C. Place the chicken pieces in a large dish and season with salt and pepper, cover with aluminum foil, and roast for 15 minutes until the skin is lightly browned.
When removing from the oven, preheat the grill, brush the chicken with some of the sauce, and grill for an additional 40 minutes; turning every 10 minutes, until well caramelized and when an instant-read thermometer inserted in the thickest part reads 165 °. Transfer to a plate and serve.
