Marinade for Roasting Chicken

A simple marinade to make your grilled or oven-roasted chicken absolutely delicious; it gives a wonderful flavor that perfectly penetrates the meat while cooking, making it juicy and perfect for sharing with family. Don't forget to try it.

  • 1/2 cups white vinegar
  • 3 limes, just the juice
  • 3 cloves garlic
  • 2 ancho chiles
  • 1 pinch cinnamon
  • 1 pinch dried oregano
  • 1 pinch ground cloves
  • salt

  • Lightly toast the chiles on a griddle.
  • Soak them in hot water for a few minutes until softened. Once soft, remove the stems, veins, and seeds.
  • Blend the chiles with vinegar, garlic, cinnamon, lime juice, cloves, and salt.
  • With a kitchen brush, coat this mixture all over the chicken (inside and out).
  • You can grill the chicken while constantly basting it with this sauce to keep it moist and turning it.
  • It also turns out very delicious in the oven, similarly turning it and basting it with this sauce (in this case, it would be 180°C for about an hour, depending on the size of the chicken).
