Marinated Chicken with Mushrooms

  • 1/2 tablespoons cumin seeds, for the marinade
  • 6 morita chiles, clean for the marinade
  • 1/4 cups tomato purée, for the marinade
  • 3 tablespoons white vinegar, for the marinade
  • 1 cup chicken broth, for the marinade
  • 2 tablespoons vegetable oil
  • 1 cup onion, sliced
  • 4 pieces chicken, thigh and leg
  • 1 1/2 cups button mushrooms, in quarters
  • salt
  • pepper, for the chicken
  • red onion, for garnish
  • corn tortillas, for accompaniment

  • For the marinade, fry the onion, garlic, and tomato in a saucepan with hot oil until the skin starts to brown. Add the clove, oregano, cumin, and morita chili, cook for a few more minutes, and incorporate the tomato puree; stir to mix. Remove from heat and blend with white vinegar and chicken broth. Set aside.
  • In a saucepan with hot oil, sauté the onion, add the chicken pieces, season with salt and pepper, and brown. Incorporate the mushrooms and pour in the marinade, adjust the seasoning. Cover and cook for 20 minutes.
  • Serve on a flat plate, garnish with red onion, and accompany with tortillas and cactus salad.
