Chicken in Green Mole

  • 6 chickens
  • 2 cloves garlic
  • 1/2 onions, small, halved
  • 5 sprigs fresh cilantro
  • 100 grams pumpkin seeds, (pumpkin seed) peeled
  • 1 kilo tomatillo
  • 10 serrano chiles, green
  • 1/4 bolillo rolls, optional
  • 1 cube chicken bullion
  • 1/2 tablespoons vegetable oil
  • salt
  • 4 sprigs epazote, washing and disinfecting
  • 4 sprigs spearmint, washing and disinfecting
  • 2 sprigs celery, washing and disinfecting
  • 5 leaves radish, washing and disinfecting
  • 4 leaves lettuce, washing and disinfecting
  • 3 onions, the tails, washing and disinfecting
  • 4 sprigs parsley, washing and disinfecting

  • Cook the chicken with 2 liters of water, salt, 1 garlic clove, and a quarter of an onion. Once cooked, set it aside.
  • Boil the tomatoes with the green chiles; when they are soft, set them aside.
  • A skillet is placed over medium heat and the pumpkin seeds are lightly toasted.
  • In a blender, blend the tomatoes, chiles, herbs, bread, pumpkin seeds, a Knorr Suiza cube, one garlic clove, and a quarter of an onion. Everything is blended with chicken broth. The sauce is set aside.
  • A pot is placed over normal heat, and half a tablespoon of oil and a small piece of onion are added to sauté.
  • Add the sauce to the pot and season with salt. Once it has boiled for 5 minutes, add the already cooked chicken and let it boil for another 5 minutes.
