Remove the skin from the chicken, wash it thoroughly, and lightly poke the cuaresmeño chiles with a fork without breaking them, just a few gentle pricks.
In a saucepan, add the olive oil, let it heat a bit, and add the onion and garlic. Once they are translucent, add the chicken and seal it well. Add the chiles, carrots, a touch of thyme, marjoram, and bay leaf.
Add salt and a pinch of pepper.
Add one and a half teaspoons of Knorr Swiss, cover, and let it cook for 10 minutes. Before it reaches its point, add the broccoli in small florets, and let it cook for approximately 35 minutes or until the chicken is cooked.
It remains a bit soupy because we can see that the chicken cooks in its own juice, and with the chicken seasoning, it gives it an exquisite flavor.
