Chicken in Poblano Sauce

The sauce that coats this chicken is very creamy, but the strips give it consistency. It is delicious.

  • 6 chickens, boiled, reserve the broth
  • 6 Poblano chiles, in strips
  • 1/2 cups corn kernels
  • 1 cup evaporated milk
  • 1/2 cups chicken broth
  • salt, and pepper to taste

  • Blend half of the strips, the milk, and the chicken broth.
  • Fry the mixture in a saucepan and season to taste; when it comes to a boil, add the corn kernels.
  • Add the chicken and serve.
