Chicken with 3 Chiles in Pressure Cooker

This pressure cooker chicken recipe is very easy and is ready in 10 minutes. It has a sauce made with 3 chiles that gives it a truly delicious flavor. Give it a try!

  • 4 chicken thighs
  • 1 cup white vinegar
  • 1 teaspoon oregano
  • 6 ancho chiles
  • 3 pasilla chiles
  • 1 pinch black pepper
  • 4 cloves
  • 1/2 onions
  • 2 cloves garlic
  • 3 tablespoons vegetable oil
  • salt
  • 200 milliliters chipotle chilli sauce

  • Wash the chicken well.
  • Roast the chiles in a skillet, making sure they don't burn.
  • Remove the stems and seeds from the chiles and soak them in hot water for 10 min.
  • Blend the chiles with the onion, garlic, cloves, pepper, vinegar, chipotle sauce, and salt to taste.
  • Sauté the chicken in the pressure cooker with the oil, add the previously blended sauce and check the seasoning.
  • Close the pressure cooker and cook for 10 min.
  • Serve hot.
