Chicken with Colorado Mole

This mole is not only simple to make but also very economical and serves well for enjoying with family and friends.

  • 1 kilo chicken drumstick
  • 4 tomatoes
  • 1/2 onions
  • 2 cloves garlic
  • 1 pinch oregano
  • 1 pinch cinnamon powder
  • 1 bolillo roll, or 20 popular or Mexican cookies
  • 1 tablet chocolate, Abuelita
  • 5 guajillo chiles
  • 1/2 liters chicken broth
  • sesame seeds, for decoration
  • 1/2 onions, to cook the chicken
  • 3 cloves garlic, to cook the chicken
  • 1 cube Knorr® tomato bouillon
  • oil , to taste

  • Boil the chicken with garlic and onion until it is cooked through, strain the broth and set aside.
  • Clean the guajillo chiles, removing seeds and veins, and soak them while the chicken is cooking.
  • Chop the tomato, onion, and garlic into not too small pieces, fry until cooked along with the cinnamon and oregano; once cooked, blend with the guajillo chile, and the Knorr tomato seasoning cube, strain and fry in a saucepan.
  • With the chicken broth, blend the bolillo with the chocolate or cookies and strain; add to the previous mixture when boiling and mix until it boils again, then add the chicken and let it boil for 5 more minutes.
