Mole Verde with Chicken

A delicious dish to share with family. Everyone has their own version, family legacy, or personal taste; I share mine hoping you like it.

  • 100 grams pumpkin seeds, of zucchini

  • 1 kilo chicken, thigh, leg, breast
  • 1 bunch spinach
  • 1/3 green lettuces

  • 1 kilo green tomato

  • Boil the chicken in 6 cups of water with a piece of onion, 1 peeled garlic clove, and salt. Let it cook until well done. Reserve the broth.
  • Add the green tomatillos, cilantro, chilies, toasted pumpkin seeds, spinach, lettuce, pepper, onion, and 1 garlic clove to the blender.
  • In a large saucepan, fry the sauce very well and wait for it to thicken (approximately 15 minutes).
  • Add the chicken, cover, and let it cook for about 10 minutes.
