Rich Peppers with Cream

  • 3 Poblano chiles
  • 1 chicken breast, boneless and skinless
  • granulated chicken bouillon, to taste
  • Manchego cheese, to taste
  • sour cream, to taste
  • butter, necessary amount
  • salt, to taste
  • pepper, to taste

  • Roast the chiles until well charred, then place them in a tied plastic bag to sweat.
  • Cut the chicken breasts into small cubes. Put some butter in a skillet, and once it's hot, add the chicken and season it with a little salt and pepper until it's golden brown or to your preference, but be careful not to leave it raw.
  • Clean the chiles and cut them into strips.
  • In another skillet, add a bit more butter and incorporate the corn kernels and the chiles, stirring for about three minutes before adding the chicken.
  • After about two or three more minutes, add the cream and season it with chicken broth; I recommend tasting it since at this point it's to your liking. Once well seasoned, simply add the grated cheese.
