Breaded Chicken Breast with Granola and Tamarind Sauce

Take care of your health and your family's with these delicious breaded chicken breasts with granola. They are made with Kellogg’s® Coco Granola, raisins, and honey, which gives them a crunchy texture and a delicious flavor. They are low in fat as they are baked instead of fried and are complemented with a delicious tamarind sauce with chipotle.

  • 2 cups Kellogg’S® coconut, raisins and honey granola
  • 2 boneless chicken breast
  • 1/2 cups flour
  • 2 eggs
  • 1 cup tamarind pulp
  • 2 tablespoons vegetable oil
  • 1/4 cups onion
  • 1 tablespoon chipotle chile
  • 1/4 cups chicken broth
  • 2 tablespoons garlic
  • 1/2 teaspoons salt
  • 1/4 teaspoons pepper
  • 1 tablespoon cooking spray

  • Preheat the oven to 180°C.
  • For the tamarind sauce; add oil to a pot, heat it, and sauté the finely chopped onion, grate the garlic, and add it to the pot. Add the tamarind pulp and finely chopped chipotle pepper. Cook over medium heat for 10 minutes.
  • Cut the chicken breasts into strips and season them with salt and pepper. Dip the chicken strips in flour, then egg, and finally in Kellogg’s® Coco Granola, raisins, and honey.
  • Grease a baking rack with cooking spray and place the breaded chicken strips on top. Place the rack over a baking tray and spray the strips with cooking spray. Bake at 180°C for 30 minutes.
  • Serve the baked chicken strips and pour the tamarind sauce over them.
