  • 1/8 onions, in quarters, for the sauce
  • 1 clove garlic, for the sauce
  • 3/4 cups bell pepper, canned, for the sauce
  • 1 cup whipping cream, for the sauce
  • 1 tablespoon butter, for the sauce
  • fresh cilantro, leaves, for garnish

  • Preheat the oven to 180°C.
  • On a baking tray, place the colorful peppers, onion, cuaresmeño chili, olive oil, salt, and pepper, and bake until roasted. Remove and cool.
  • On a baking tray lined with aluminum foil, place a chicken fillet, season with salt and pepper, spread the Hummus Libanius®, and add the roasted vegetables. Using your hands, roll it up and seal. Repeat with the remaining fillets.
  • Bake for 25 minutes or until the chicken is cooked through.
  • For the sauce, in a deep skillet, add the oil and sauté the onion, garlic, and peppers. Blend with the heavy cream and return to heat with a bit of butter. Season with salt and pepper.
  • On a cutting board, slice the chicken, serve on a plate with sauce, and garnish with cilantro.
