For the marinade: blend the sour orange juice, ground cumin, achiote, white pepper, cinnamon, allspice, garlic cloves, and salt. Set aside.
Arrange the banana leaves in a baking dish, add the chicken breasts, and pour the marinade over them. Refrigerate for 8 hours.
Bake the pibil chicken at 180 °C for 1 hour. Spread a tortilla with some beans, serve the fajitas, and accompany with xnipec salsa. Pair with Sidral Mundet® Apple flavor.
