Pita Bread with Salad and Grilled Chicken

  • 1/2 cups cucumber, sliced in fans, for the salad
  • 1 cup cherry tomato, quartered for the salad
  • 1/4 red onions, sliced for the salad
  • 2 tablespoons chile flakes, for the salad
  • 2 tablespoons fresh cilantro, finely chopped for the salad
  • 1/4 cups lime juice, for the salad

  • 4 chicken breasts
  • 2 tablespoons olive oil, for the chicken

  • 4 pita breads
  • 1 bag Eva® spring mix provenza salad, 200 grams
  • avocado, sliced for garnish
  • fresh cilantro, (leaves) for garnish

  • In a bowl, mix the beans, cucumber, cherry tomatoes, red onion, chili flakes, cilantro, and lime juice until fully combined; season with salt and pepper. Set aside.
  • For the chicken, in a hot grill, pour olive oil, place the chicken, and season with oregano, salt, and pepper; cook for 15 minutes, cut into strips, and set aside.
  • Heat the pita bread in a hot skillet. On the pita bread, place the Spring Mix Provenza EVA®, add the bean salad and grilled chicken; garnish with avocado and cilantro leaves. Enjoy.
