Homemade Roasted Chicken

  • Thaw the chicken at least one day in advance in the refrigerator.
  • Place the chicken in a deep dish and marinate with coarse salt in the refrigerator for at least 4 hours.
  • Preheat the oven to 250 degrees Celsius.
  • Remove the chicken from the deep dish and wash it very well. Then dry it with paper towels.
  • Season with pepper and thyme and place in a roasting pan with a rack. Pour a cup of water into the bottom of the pan to prevent the fat from burning.
  • Bake the chicken for 30 minutes, remove from the oven, flip it over, and bake for an additional 20 minutes. Remove again, flip, and bake for another 5-10 minutes.
  • The chicken is ready when the skin is golden and crispy, and the meat inside is well-cooked and juicy.
