  • 6 guajillo chiles, rehydrated
  • 1/4 onions, roasted
  • 2 garlic, roasted
  • 1/2 teaspoons thyme
  • 1/2 teaspoons oregano
  • 1/2 teaspoons cumin
  • 3 black peppercorns
  • 2 avocado leaves
  • 1 bay leaf
  • 1/4 cups white vinegar
  • 1/2 cups chicken broth
  • salt
  • 1 chicken

  • Blend the soaked guajillo chiles, roasted onion, roasted garlic cloves, thyme, oregano, whole pepper, avocado leaves, bay leaf, vinegar, chicken broth, and salt for 3 minutes.
  • Place a rack over a baking tray and put the chicken on top, add the marinade and brush it on. Arrange the baby potatoes around the chicken and bake at 170 °C for 90 minutes.
  • Serve the marinated chicken on a platter and accompany with pickled chiles.
