San Marcos chicken is a typical dish from Aguascalientes! It is so popular that it is one of the star dishes at the San Marcos fair. So don't think twice, prepare it and pair it with a refreshing Sidral Mundet®.
For the marinade: Blend the tomato, cloves, cinnamon stick, oregano, white vinegar, chicken broth, onion, salt, and pepper at medium speed for 2 minutes or until everything is perfectly combined. Set aside.
In a bowl, add the chicken legs and thighs, then pour the marinade over the chicken to marinate. Let it rest for 30 minutes.
In a deep skillet over medium heat, melt the lard and begin to sear the marinated chicken (set aside the remaining marinade), then cook for 5 minutes until it changes color.
Add the chorizo, the rest of the marinade, the potatoes, and adjust the seasoning. Cook the chicken for 15 minutes until everything is well cooked.
Serve the San Marcos chicken over a bed of lettuce and accompany it with pickled chilies and an exquisite Sidral Mundet® Apple flavor.
