This apple walnut stuffed chicken recipe is perfect for Christmas dinner, especially if you have a few guests and a turkey is too large. Try this honey-roasted chicken for any special gathering and give your meal a twist with its glaze and special flavor. The ideal side dish to accompany it is a salad or cooked apple slices with the chicken.
3/4 cups Golden Delicious apple, cubed for the stuffing

For the stuffing, mix the apples with the walnut, ginger powder, thyme, honey, and white wine in a bowl until fully incorporated. Set aside.
For the glaze, in a saucepan over medium heat, melt the butter, add the applesauce, orange juice, chicken broth, and cook for a few minutes. Incorporate the bay leaf, clove, cinnamon, star anise, honey, garlic powder, and white wine. Season with salt and pepper, cook for 5 more minutes, and set aside.
Using hemp twine, tie the chicken legs, insert a toothpick in each wing to keep them in place, and stuff the chicken with the apple and walnut mixture.
In a butter-greased baking tray, place the stuffed chicken, add the onion around, along with the apple and walnut. Pour the glaze over it and add the cinnamon sticks. Season with salt and pepper, and cover with aluminum foil. Bake at 200 °C for 45 minutes.
Remove the chicken from the oven, uncover, and brush with honey, then bake at 200 °C for 15 minutes or until the skin is golden. Remove again from the oven, place on a serving platter, serve with apple slices, and garnish with cinnamon and thyme.
