For the stuffing, mix the apples with the walnut, ginger powder, thyme, honey, and white wine in a bowl until fully incorporated. Set aside. For the glaze, in a saucepan over medium heat, melt the butter, add the applesauce, orange juice, chicken broth, and cook for a few minutes. Incorporate the bay leaf, clove, cinnamon, star anise, honey, garlic powder, and white wine. Season with salt and pepper, cook for 5 more minutes, and set aside.
