Chicken Cordon Bleu

Breaded chicken breasts filled with ham and cheese. A typical dish from the famous French cooking school Cordon Bleu. Delicious!

  • 4 chicken breasts, flattened
  • 8 slices deli ham
  • 16 slices Swiss cheese
  • 2 teaspoons fresh thyme
  • 1/4 cups flour
  • 1 cup breadcrumbs, (ideally the Japanese kind called Panko)
  • 2 teaspoons butter, melted
  • 2 eggs
  • 1 clove garlic, finely chopped

  • Preheat the oven to 350 degrees Fahrenheit (180°C) and flatten the chicken breasts. Tip for flattening the breasts: Place in a plastic bag (zipper type for freezing) and pound with a skillet or rolling pin until flat.
  • Fill the chicken breasts with two slices of cheese, then 2 slices of ham, and finally 2 slices of cheese and roll up. Use a toothpick if necessary to hold the shape.
  • Mix the breadcrumbs with thyme, finely chopped garlic, melted butter, and salt and pepper. Beat the eggs. Season the flour with salt and pepper as well.
  • Dip the chicken rolls first in flour, then in egg, and finally in breadcrumbs.
  • Bake until the chicken breasts are cooked, about 20 minutes.
  • Alternatively, before placing the chicken breasts in the oven, you can fry them in a bit of butter and then finish cooking in the oven for 13-15 minutes.
