Stuffed Chicken Roll with Spinach and Cheese

  • 1/4 cups onion
  • 1 tablespoon garlic
  • 1/2 cups red bell pepper
  • 1/2 cups yellow bell pepper
  • 2 cups spinach
  • 1/2 cups asadero cheese, shredded
  • 2 chicken cutlets, large
  • new potatoes
