Delicious recipe with a new way to prepare or eat the typical romeritos for Christmas. Chicken breasts stuffed with romeritos and mole, delicious and perfect for the whole family.
Clean the romeritos by removing the thicker stems and wash them with plenty of cold water. In a pot with boiling water and a little salt, cook the romeritos for 15 minutes and drain.
Cook the nopales for 15 minutes in boiling water and rinse with cold water.
Sauté the onion until translucent. Add the romeritos and cooked nopales. Season with chicken bouillon powder and after a few minutes, remove from heat.
Season the chicken breasts with salt and place a little of the filling inside, roll them up and secure with a toothpick so they don't come apart.
Heat oil in a skillet and fry the chicken breasts on all sides. Heat the mole while doing this.
