Stuffed Chicken with Romeritos and Mole

Delicious recipe with a new way to prepare or eat the typical romeritos for Christmas. Chicken breasts stuffed with romeritos and mole, delicious and perfect for the whole family.

  • 1 kilo romeritos
  • 6 boneless chicken breast
  • 2 nopales, cooked and cubed
  • 2 tablespoons vegetable oil
  • 1/2 onions, chop
  • 400 grams mole sauce, prepared
  • 2 cups chicken broth
  • 2 teaspoons granulated chicken bouillon

  • Clean the romeritos by removing the thicker stems and wash them with plenty of cold water. In a pot with boiling water and a little salt, cook the romeritos for 15 minutes and drain.
  • Cook the nopales for 15 minutes in boiling water and rinse with cold water.
  • Sauté the onion until translucent. Add the romeritos and cooked nopales. Season with chicken bouillon powder and after a few minutes, remove from heat.
  • Season the chicken breasts with salt and place a little of the filling inside, roll them up and secure with a toothpick so they don't come apart.
  • Heat oil in a skillet and fry the chicken breasts on all sides. Heat the mole while doing this.
