Thighs in Plum and Chipotle Sauce

Plum sauce is typical for pork, but it goes very well with chicken! I'm sharing this recipe for chicken thighs in plum and chipotle sauce, which is one of my favorites; go ahead and prepare it, it's very simple and delicious, and your family will love it.

  • 4 chicken thighs, skinless
  • 1/2 onions
  • 250 grams prunes
  • 4 guajillo chiles
  • 1 red beefsteak tomato, medium
  • oregano, thyme and bay leaf (for aroma)
  • 250 milliliters red wine
  • 3 cloves garlic
  • 3 chipotle chiles
  • 1/2 kilos potato
  • butter
  • salt, and pepper, necessary amount
  • water, necessary amount
  • whole milks, necessary amount

  • In a skillet, sauté whole garlic cloves, diced onion, and prunes.
  • Add the whole guajillo pepper, diced tomato, oregano, thyme, and bay leaf. Deglaze with red wine, blend this preparation with the chipotle peppers, season, and set aside. (the mixture should be like a not very liquid paste)
  • Spread the thighs with the previous preparation. In a zip-lock bag, place each thigh separately, meaning one thigh per bag, and close it by removing all the air from the bag.
  • Cook in a pot with clean water for 40-45 minutes over medium heat.
  • For the puree: Boil the peeled potatoes with plenty of water and salt.
  • Once the potatoes are cooked, mash them to form a puree. Place them in a pot over heat and add warm milk and butter, finishing with salt and pepper to taste.
  • To serve, carefully remove the thighs from the bag and place a bit of potato puree to accompany.
