In a skillet, sauté whole garlic cloves, diced onion, and prunes. Add the whole guajillo pepper, diced tomato, oregano, thyme, and bay leaf. Deglaze with red wine, blend this preparation with the chipotle peppers, season, and set aside. (the mixture should be like a not very liquid paste)
