Chili con Carne

  • 2 kilos ground beef
  • 1 tablespoon cumin
  • 2 tablespoons vegetable oil
  • 1 kilo onion, finely chopped
  • 500 grams red bell pepper, chopped
  • 500 grams yellow bell pepper, chopped
  • 2 Jalapeño chiles, chopped
  • 7 tablespoons piquín chile powder
  • 2 tablespoons chipotle chile, canned
  • 2 canned tomato, chopped
  • 2 cans pinto beans, large cans
  • 1 bottle ale beer
  • sour cream
  • American cheese
  • chives, chopped

  • In a large pot, cook the ground beef until it is lightly cooked, about 8 minutes.
  • In a pan, heat the oil over medium heat and brown the onion, peppers, and jalapeños. Cook for 10 minutes.
  • Add the onion mixture to the pot with the meat and mix.
  • Add all the spices and chilies and mix, cook over medium heat.
  • Add the tomatoes, beans, and beer, and cook until it boils. Reduce to low heat and continue cooking for 20 minutes.
  • Season with salt and pepper and serve.
