Christmas Red Loin

  • 2 kilos pork loin
  • 100 grams almonds
  • 100 grams olives
  • 100 grams bacon
  • 1 cup fruit wine, red
  • aromatic herbs
  • salt
  • 200 grams raspberries
  • 2 tablespoons sugar

  • Season the meat to taste with salt, pepper, and herbs, and let it rest for 10 minutes.
  • Then stuff with olives, almonds, and bacon, place in a baking dish, add the wine, and cover with aluminum foil, letting it rest for another 10 minutes.
  • Bake for 2 hours and 15 minutes at a temperature of 200 °C; after this time, remove the aluminum foil and let it bake for another 15 minutes. Then remove from heat and strain the juice.
  • Put the juice in a saucepan over low heat, add the fruits (raspberries) and sugar to make the red sauce.
  • Slice the loin and serve with the red sauce.
