Classic Pata Tostadas

  • 1 kilo pig feet, cooked and diced
  • 1 cup onion, in thin strips
  • 2 cups water
  • 1 cup white vinegar
  • 1/2 cups Huichol® sauce with lemon
  • 1 leaf bay
  • 2 tablespoons oregano, dry
  • 1 tablespoon salt
  • 1/2 tablespoons pepper
  • 2 carrots, in thin strips
  • 1 cup tomato, in small cubes
  • 1/4 cups olive oil
  • tostadas
  • refried beans, to serve the tostada
  • lettuce, to serve the tostada, in thin strips
  • sour cream, to serve the tostadas
  • cheese, grated to serve the tostadas

  • Mix the beef pata with onion, water, white vinegar, Huichol® sauce with lime, bay leaf, oregano, salt, and pepper in a bowl.
  • Cover with plastic wrap and refrigerate for at least 6 hours.
  • Remove the bowl from the refrigerator and add the carrot, tomato, and olive oil. Mix until well combined.
  • Place the tostadas on a flat plate, spread a tablespoon of beans on each, then add the pata. Garnish with lettuce, cream, and grated cheese. Serve with pickled chilies.
