Mix the beef pata with onion, water, white vinegar, Huichol® sauce with lime, bay leaf, oregano, salt, and pepper in a bowl.
Cover with plastic wrap and refrigerate for at least 6 hours.
Remove the bowl from the refrigerator and add the carrot, tomato, and olive oil. Mix until well combined.
Place the tostadas on a flat plate, spread a tablespoon of beans on each, then add the pata. Garnish with lettuce, cream, and grated cheese. Serve with pickled chilies.
