Classic Red Wine Chicken

Try this delicious chicken in red wine or “Coq au vin,” a classic of French cuisine, made with carrots, baby potatoes, and a red wine-based sauce. This is a sophisticated and delicious recipe, yet very simple to prepare.

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 chicken thighs, with skin
  • 3 chicken drumsticks, with skin
  • 1 cup bacon, finely chopped
  • 1/2 onions, cut into pieces
  • 2 tablespoons shallot, cut into cubes
  • 1 cup new potatoes, cut in half
  • 3 carrots, sliced
  • 2 tablespoons cornstarch
  • 2 cups red wine
  • 1 cup chicken broth
  • 3/4 cups tomato purée
  • 1 teaspoon thyme, powdered
  • 2 leaves bay
  • 1 tablespoon parsley
  • salt and pepper
  • 1 cup button mushrooms, sliced

  • In a skillet, melt the butter, add the oil, and sear the previously seasoned chicken pieces. Set aside.
  • In the same skillet, fry the bacon, add the onion, shallot, baby potatoes, carrots, chicken pieces, and cornstarch.
  • Pour in the red wine and let it reduce by half. Add the chicken broth, tomato puree, thyme, bay leaf, parsley, season with salt and pepper, and let it cook for 30 minutes or until the chicken is fully cooked.
  • Add the mushrooms and cook for 10 more minutes.
  • Serve on a flat plate and accompany with pasta.
