Cochinita Pibil in Banana Leaf

You never thought this classic dish from Yucatecan cuisine could be so simple to prepare while achieving the best flavor. Delicious shredded pork marinated with orange juice, lemon juice, achiote and Knorr® Suiza Chicken Broth. Cooked with the traditional banana leaf that you will love.

  • 4 bitter oranges, only the juice
  • 1/2 cups orange juice, strained
  • 1/4 cups lime juice, strained
  • 3/4 sticks achiote
  • 2 1/2 tablespoons Knorr® granulated chicken bouillon
  • 1.750 kilos pork, pulp, in large pieces
  • 2 squares banana leaf, roasted
  • 2 tablespoons vegetable oil

  • Blend the orange and lemon juices with the achiote and 1 tablespoon of Knorr® Suiza Chicken Broth.
  • Place the meat in a deep container and pour the achiote mixture over it. Mix until all the meat is covered and refrigerate for 4 hours or overnight.
  • Place a rack inside a pressure cooker with 3/4 cup of water, cover with aluminum foil and the banana leaves.
  • Place the meat along with the marinade. Cover the pot and cook for 50 minutes starting when the valve sounds.
  • Shred the meat and reserve the cooking broth.
  • Heat the oil in a saucepan and fry the meat, adding some of the cooking broth and seasoning with the remaining Knorr® Suiza Chicken Broth.
  • Serve and accompany with pickled red onions and corn tortillas.
