Cochinita pibil is one of the typical dishes from the state of Yucatán and a very Mexican dish with a lot of Caribbean flavor; these tostadas accompanied by a habanero sauce will be the perfect excuse to gather the family.
In a blender, add the pepper, garlic, achiote, orange juice, guajillo chili, ancho chili, cumin, white pepper, oregano, cinnamon, and salt, blend until completely integrated.
In a baking dish, place the banana leaf, add the meat on top, and pour the previous sauce until completely covered. Cover with the banana leaf and aluminum foil. Bake for 1 ½ hours.
For the sauce, in a bowl, mix the onion, habanero chili, pineapple, vinegar, lime juice, oregano, and season with salt and pepper.
Take out the cochinita and, using 2 forks, shred the meat. Finish cooking in a pot or deep skillet until the flavors are fully integrated and the liquid is slightly reduced.
