Wash the chicken and vegetables. Then peel and cut the carrot into cubes.
Slice the green onion head into rounds and reserve the stem.
Put the chicken broth, wine, chicken, onion, and carrots in a pot, and simmer on low heat for 25 minutes.
Take out the chicken to shred after 25 minutes.
Add the rice to the pot and cook for 20 minutes; once the chicken is shredded, add it back to the pot.
Season with salt and pepper and serve, placing the green onion on top.
