The cordon blue is a very traditional recipe for formal events. The recipe consists of chicken stuffed with cheese and ham, and it has a special touch because of the breading.

6 slices Manchego cheese
2 eggs
breadcrumbs

Season each chicken cutlet with salt and pepper.
Place a slice of ham and Manchego cheese on each cutlet, fold in half and insert a toothpick to hold it together.
Beat the egg until it forms ribbons and dip the breaded cutlets in the egg.
Bread them with the breadcrumbs and fry them in oil.
