Cottage Cheese Stuffed Chicken

  • 1 chicken
  • salt
  • 1 lime, squeezed
  • 2 oranges, squeezed
  • 1 leaf bay
  • 3 cloves garlic, chopped
  • 1 cup cottage cheese, LYNCOTT, (for the filling)
  • 2 carrots, finely grated (for the filling)
  • 200 grams peas, fresh or frozen (for the filling)
  • 1 green onion, chopped (for the filling)
  • dried chile, flakes to taste (for the filling)

  • Place the chicken in an oven-safe dish.
  • Season with salt, pepper, lemon juice, and orange juice.
  • Add the bay leaf and garlic. Cover with non-stick plastic wrap and refrigerate for 2 hours.
  • For the filling: Drain the liquid from the cottage cheese. Mix the filling ingredients in a baking dish. Season with salt and pepper.
  • Remove the chicken from the refrigerator and stuff it with the previous preparation.
  • Secure with toothpicks and place in a preheated oven at 200ºC (moderate temperature) for about one hour or until the chicken is golden and cooked but juicy.
