Treat your whole family to these tasty chicken carnitas; they are full of flavor and very easy to make. Plus, you’ll see that they have the same flavor as traditional carnitas, but with the twist of preparing them with chicken.
Add the lard in a pot over medium heat and let it melt. Add the chicken pieces one by one and let cook for 10 minutes.
Add the water, salt, Coca-Cola, orange juice, thyme, onion, and garlic. Cook for 1 hour over medium heat, stirring constantly to prevent sticking or excessive browning at the bottom of the pot.
When the liquid reduces, remove the pieces of chicken from the pot with lard, shred the chicken on a cutting board, and set aside.
Serve the chicken carnitas on tortillas, adding cilantro, onion, lime, and salsa.
