Add the lard in a pot over medium heat and let it melt. Add the chicken pieces one by one and let cook for 10 minutes. Add the water, salt, Coca-Cola, orange juice, thyme, onion, and garlic. Cook for 1 hour over medium heat, stirring constantly to prevent sticking or excessive browning at the bottom of the pot.
