Boil water in a pot and add the diced potato, cook for 12 minutes or until the potato is slightly soft. Remove from heat, drain, and set aside.
Sauté the onion and garlic in a pan with hot vegetable oil until they take on a shiny color. Then lower the flame, add the serrano chili and the pork chorizo, using a spoon or a whisk, press the pork chorizo to crumble. Cook for 5 minutes or until it starts to brown.
Add the cooked potato, season with salt and pepper, and mix to combine. Cook for a few more minutes, making sure not to overcook the potato so it doesn't break apart. Remove from heat.
Prepare your tacos accompanied by onion and cilantro.
