Ingredients: water; 5 pieces potato, peeled, in medium cubes; 2 tablespoons vegetable oil; 1/2 cups onion, finely chopped; 2 tablespoons garlic; 2 serrano chiles; 2 cups chorizo, preferably ranch-style, chopped or in medium pieces; salt; pepper; corn tortillas, to make tacos; 1/4 cups onion, finely chopped, for garnish; 1/4 cups cilantro, finely chopped, for garnish

Boil water in a pot and add the diced potato, cook for 12 minutes or until the potato is slightly soft. Remove from heat, drain, and set aside. Sauté the onion and garlic in a pan with hot vegetable oil until they take on a shiny color. Then lower the flame, add the serrano chili and the pork chorizo, using a spoon or a whisk, press the pork chorizo to crumble. Cook for 5 minutes or until it starts to brown.
