Cook these delicious Duck Confit Tacos. We’ll show you how to make an avocado puree similar to guacamole to accompany them. The tortillas are handmade, so you don’t need a tortilla machine to make them. The texture of the duck is crispy due to being confit. These Duck Confit Tacos are a rich recipe to prepare as a main dish or as an appetizer. Enjoy the combination of corn with avocado and duck.
For the confit, in a medium pot add the duck breast with the skin side down and cover with the orange soda, evaporated milk, oil, rosemary, thyme and let it come to a boil.
Once it comes to a boil, lower the temperature and add salt, cumin and cover. Cook for 2 hours, stirring occasionally or until the duck is cooked and tender. Remove from heat and reserve the cooking liquid.
For the tortillas, form balls with your hands from the blue dough and use a press to shape the tortillas. Cook on a skillet over low heat until they puff up, turning at least twice. Keep warm.
For the puree, blend the avocado with the cream, lime juice, and ¼ cup of the duck cooking liquid until you achieve a smooth puree.
For assembly, add two tablespoons of the puree to a plate and use a glass to press and create a well. Place a tortilla on top, serve the confit duck, and garnish with pork cracklings, rings of green onion, avocado cubes, cilantro sprouts, and serve with lime juice.
